INGREDIENTS:

INSTRUCTIONS:

  1. Place cashews in lightly salted water, and let soak for 4-8 hours.
  2. Drain and rinse cashews well.
  3. Add cashews, coconut milk, vanilla and salt to a blender, and blend on high until smooth.
  4. Remove 1 cup of this “cashew-mallow” mixture, and set aside.
  5. Place dark chocolate in a small bowl (save a few for garnish).
  6. Brew espresso, and immediately pour over the chocolate, stirring well to melt.
  7. Add melted chocolate mixture, dates and salt to the blender with the remaining cashew-mallow mixture. Blend on high until completely smooth.
  8. Place a couple spoonfuls of the mocha mixture at the bottom of 5 or 6 dessert glasses or bowls.
  9. Add a drizzle of reserved cashew-mallow to each glass, followed by more mocha and cashew-mallow. Stir for a swirl pattern.
  10. Crumble graham crackers on top, sprinkle with remaining chocolate and a pinch of flaky salt if desired.
  11. Serve immediately for a creamier texture, or place in the fridge until set for at least 4 hours. Serve, and enjoy!
