Ingredients and Directions
Ingredients
1 cup raw cashews
1 14 oz. can full-fat coconut milk, well stirred
1 Tbsp. Solspring® Wild Acacia Raw Honey (or maple syrup for plant-based)
1 tsp. pure vanilla extract
1/8 tsp. Solspring® Real Salt® Ancient Fine Sea Salt
2 Solspring® Dark Chocolate Bars, roughly chopped
1/4 cup freshly-brewed Solspring® Dark Roast Brazilian Espresso
1 cup packed, pitted soft dates
4 graham crackers (gluten-free, if desired)
Directions
Place cashews in lightly salted water, and let soak for 4-8 hours.
Drain and rinse cashews well.
Add cashews, coconut milk, vanilla and salt to a blender, and blend on high until smooth.
Remove 1 cup of this “cashew-mallow” mixture, and set aside.
Place dark chocolate in a small bowl (save a few for garnish).
Brew espresso, and immediately pour over the chocolate, stirring well to melt.
Add melted chocolate mixture, dates and salt to the blender with the remaining cashew-mallow mixture. Blend on high until completely smooth.
Place a couple spoonfuls of the mocha mixture at the bottom of 5 or 6 dessert glasses or bowls.
Add a drizzle of reserved cashew-mallow to each glass, followed by more mocha and cashew-mallow. Stir for a swirl pattern.
Crumble graham crackers on top, sprinkle with remaining chocolate and a pinch of flaky salt if desired.
Serve immediately for a creamier texture, or place in the fridge until set for at least 4 hours. Serve, and enjoy!
