The coffee cherries are harvested and then fermented for 36 hours until the coffee bean can be separated from the skin and pulp. Once separated from the coffee cherry, each bean is dried and slow roasted to produce the perfect flavor. The large, smooth beans have excellent aroma, medium body, and low acidity. This smooth, medium or velvet roast coffee is mild, and therefore great for many different palates.

    Wonderful flavor - I have been drinking organic coffee for years and this Mexican Chiapas is a choice brew. Since I seldom have more than one cup a day it has to be the best!

  • Our all time favorite!

    Though I have been called a cowboy in my younger days because of my love for horses and my no buck way of breaking them. I do not like “Cowboy Coffee”. I like a smooth non bitter coffee low in acidity. My wife and I both really like this coffee. May not be robust enough for some, and to that I say to each his own.
